So where do I start with this guy? I've only read a couple of summaries of his thoughts, but which one of his books is the best to start out with? I've heard that "Either or" should be his most well known. Is that a good start?
Any thoughts and opinions on this guy?

Fear and Trembling, or the anthology Provocations. It is an amazing starting point, divided up into six sections getting at the core of his thoughts.
